Orange Cake

After my last inane post, I had a few requests for the orange cake recipe so I thought I'd post it :)

My husband reckons the cake tastes a lot like Fruit Loops. I'm not sure... it possibly does but I haven't had a Fruit Loop in over a decade so my memory's a little fuzzy. So if you do end up making this, please let me know if you think it does taste like Fruit Loops to you. Or not. Thanks in advance :)

Orange cake
1 stick (1/2 cup) unsalted butter, softened
3/4 cup sugar
2 eggs, separated
Zest of 2 oranges
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 cup fresh orange juice
Glaze:
1/4 cup fresh orange juice
1/4 cup sugar
  1. Preheat oven to 350F and prepare a bundt pan.
  2. Cream the butter and sugar, and beat till light. Beat in the yolks one at a time, then add the zest.
  3. Add the sifted dry ingredients alternately with the orange juice.
  4. Beat the egg whites till stiff and fold into the batter gently.
  5. Pour batter into the bundt pan and bake 30 to 35 minutes, or until the sides shrink away from the edge of the pan.
  6. Cool for 10 minutes, turn the cake out onto a plate and drizzle the glaze over the cake while it's still warm.
  7. Serve the cake when cooled.
  8. Glaze: Combine the orange juice and sugar in a small saucepan and simmer gently till light syrup forms, about 5 to 10 minutes.

I've never heard of or tasted orange cake, so I am definitely going to try this recipe! It looks very moist and sounds delish. Thanks for sharing the recipe.
