Sometimes, I can't be stuffed to cook (Am I right, ladies?). So I buy a cooked chicken at the supermarket, shred it and make chicken salad. This recipe is so simple and yet it blows my mind every single time. And it saves me from having to hear my husband lament about how there's nothing to eat.
There's not a whole lot to say about it except go buy yourself a roast chicken or boil some, and make this. I omit the celery (because raw celery = ick) and I only use red grapes.
